Kopi Santan - Jawa Timur




Bahan:
  • 2 sdm kopi bubuk
  • 600 ml air
  • 4 cm jahe, kupas, memarkan
  • 2 batang serai, ambil bagian putih
  • 50 ml santan kental hangat
  • 30 gram gula aren, sisir

Cara Membuat:
  1. Rebus air, jahe, dan serai sampai beberapa saat.
  2. Seduh kopi bubuk dengan campuran air, saring.
  3. Tuang ke dalam gelas.
  4. Masukkan gula aren, aduk rata.
  5. Tuang santan hangat.
  6. Sajikan hangat.

Ayam Bumbu Bali



Bahan-bahan :

  • 1 ekor ayam dipotong 20 bagian
  • 1 cm lengkuas digeprak
  • 2 lembar salam
  • 3 lembar daun jeruk
  • 2 buah tomat masing-masing potong 8 bagian
  • 2 sdm kecap manis

Bumbu yang dihaluskan :
  • 7 buah cabe merah
  • 5 buah bawang merah
  • 4 siung bawang putih
  • 2 cm jahe
  • 3 butir kemiri
  • 1/2 sdt terasi yang telah digoreng

Cara Membuat:

  1. Ayam yang telah dipotong dan dibersihkan diberi garam, diamkan sebentar, goreng setengah matang, sisihkan.
  2. Tumis bumbu yang dihaluskan hingga harum, masukkan lengkuas, salam, daun jeruk, tomat dan kecap manis.
  3. Masukkan ayam yang telah digoreng, masak hingga hingga tomat hancur dan bumbu meresap ke dalam ayam, siap hidangkan.

Tea Egg - Teh Talua


Teh Talua or Teh Telor is a beverage from West Sumatra that is popular throughout the region. This drink for making back the stamina. In west sumatera the farmer using this after working hard in farm.

Ingredients-Bahan:
  • 1 fresh egg chicken or duck (just take the yolk) - telur ayam kampung atau telur bebek segar (kuningnya saja)
  • 1-2 spoon sugar - 1 s/d 2 sendok makan gula pasir
  • Lemon - jeruk nipis/lemon
  • Black Tea - teh hitam

Directions - cara membuat:
  1. Beat yolk and sugar until fluffy (the color will be white) - kocok kuning telur dan gula sampai benar-benar mengembang (tandanya warna dari kocokan telur dan gula akan berwarna putih).
  2. Make tea with boiled water then put inside the fluffy egg sugar - Buat teh di gelas lain dengan air mendidih lalu siramkan ke dalam kocokan telur dan gula.
  3. Put lemon inside - Masukkan air jeruk nipis ke dalam campuran teh dan kocokan telur
  4. Ready to drink - Siap untuk diminum

Note - tips : yolk and sugar should be fluffy if not the taste will be like egg :p - Kuning telur dan gula harus benar-benar mengembang jika tidak maka akan rasanya akan seperti telur :p

Martabak Noodle - Martabak Mie


This food very good for breakfast. Easy to make and the ingredients very easy to find. Don't waste your time and let's start cooking for our breakfast today ;) Enjoy your cooking...

INGREDIENTS - BAHAN:
  • 100 gram noodle - 1 mi instant
  • Onion - bawang bombay
  • Celery - daun seledri
  • Leeks - daun bawang
  • Salt - tidak usah pakai garam karena sudah ada bumbu mi instant
  • Pepper - merica
  • Broth block - kaldu blok juga tidak usah dipakai karena sudah ada bumbu mi instant
  • 2 egg - 2 telur
  • Grated Cheese (can be without cheese) - keju parut, jika tidak suka keju bisa juga tidak pakai keju
  • Butter - mentega untuk menggoreng

DIRRECTION - CARA MEMBUAT:
  1. Boiled 100 gram noodle until ready, wait until not hot. - Rebus mie instant tanpa bumbu hingga mi masak, tunggu hingga dingin.
  2. Slice onion, celery and leeks. - Iris bawang bombay, daun seledri dan daun bawang.
  3. Stir egg on bowl, put slice onion, celery and leeks into bowl. And stir it. - Kocok telur dalam mangkok, masukkan bawang, daun seledri dan daun bawang ke dalam mangkuk dan kocok bersama telur.
  4. Put noodle inside the bowl and stir again. - Masukkan mi yang telah dingin bersama bumbu instantnya lalu kocok kembali.
  5. Put cheese, pepper, salt and broth block inside the bowl and stir again. - Masukkan keju parut dan merica lalu kocok.
  6. Put butter into the pan until hot than put all the dough from the bowl into the pan and shape it. Masukkan mentega di penggorengan hingga panas lalu masukkan adonan telur dan bentuk adonan telur secara merata di penggorengan.
  7. Wait until the other side become more brown and turn into another side and wait until brown. - Tunggu hingga sisi belakang menjadi kecoklatan lalu balik bagian lainnya dan tunggu hingga kecoklatan. Jika kedua sisi telah kecoklatan, martabak sudah siap untuk dihidangkan :)
  8. Ready to serve - Mari makan :)

Coto Makassar


One thing that I will never forget about my hometown is the traditional food, Coto Makassar. Coto Makassar is a traditional food from Makassar (South Sulawesi). This special food is full of ingredients. From it’s history the ingredients are 40 kinds of seasoning. In 1538, it was cooking in pot soil and only served at formal events in palace. But now, everybody can enjoy this traditional food in every where in Makassar. This food is very popular in Makassar, so you will find very easy in the street. Not only in Makassar, in major city around Indonesia (Jakarta, Bandung, Surabaya, Bali, even Yogyakarta) also already has this menu in some restaurant out of Makassar.


For you who love cooking, you can try to make this traditional food in your kitchen. Today, I will give you the secret of ingredients recipe from palace of Coto Makassar. You can find the ingredients very easy in market in Indonesia. Try the recipe in your kitchen and enjoy it. Remember, the best Coto Makassar is only in Makassar.


Ingredients - Bahan:

  • 1 kg lean meat - 1kg daging sapi sengkel
  • 2 liter starch water (water from after wash rice) - 2 liter air tajin (bekas cucian beras)
  • 5 stick lemon grass, bruise it - 5 batang serai, memarkan
  • 5 “salam” leaves (can be without this if you can not find it in the market) - 5 daun salam
  • 250 gram peanut, fried it and grind it - 250 gram kacang goreng, haluskan
  • 3 spoon of oil - 3 sendok makan minyak
  • 5 centimeter of ginger, bruise it - 5 cm jahe, memarkan
  • 3 centimeter of galangal, bruise it - 3 cm lengkuas, memarkan
  • 10 cloves garlic - 10 siung bawang putih
  • 8 grains roasted hazelnut - 8 butir kemiri, sangrai
  • 1 spoon of roasted coriander seeds - 1 sendok makan ketumbar, sangrai
  • 1 tea spoon of roasted caraway seeds - 1 sendok teh jintan, sangrai
  • 1 spoon salt - 1 sendok makan garam
  • 1 tea spoon white pepper - 1 sendok teh merica
  • Leeks, slice it - daun bawang, iris
  • Celery, slice it - daun seledri, iris
  • Lemon

Direction - Cara Membuat:

  1. Boiled the meat with starch water, lemon grass, galangal, ginger, and “salam” leaves. After the meat cooked separate it with the water and cut the meat like as cube. - Rebus daging sapi bersama air tajin, serai, lengkuas, jahe, dan daun salam. Setelah matang angkat, tiriskan, potong dadu.
  2. Puree garlic, hazelnut, coriander seeds, caraway seeds, salt, and white pepper. After everything mix, roasted it until you can feel the smell of it. Put it into the water from meat. - Haluskan bawang putih, kemiri, ketumbar, jintan, garam dan merica. Setelah halus, tumis hingga harum, masukkan ke dalam kaldu daging.
  3. Put the grind peanuts into the water from meat and boiled everything until the water boiling. - Masukkan kacang goreng halus ke dalam kaldu dan didihkan.
  4. Put some of meats into the bowl, water with seasoning, little bit of leeks and celery also lemon. - Masukkan daging secukupnya ke dalam mangkuk yang telah diisi air coto, tambahkan daun bawang dan seledri yang telah diiris dan tambahkan air jeruk.
  5. You can eat it with rice to make your stomach more full, hehehehehe :p - Silakan dimakan dengan nasi untuk pelengkap.

Crispy noodle from Makassar - Mie Titi

Crispy noodle from Makassar popular with named MIE TITI. This food very delicious and will make your stomach full with satisfied. The ingredients very easy to find in market. This is one of my favorite food also. Full of vitamin and healthy. This weekend enjoy this food in your table. SELAMAT MAKAN :)


Ingredients - Bahan:


  • Pasta/noodle - mie
  • chicken fillet - ayam filet
  • shrimp, slice - udang dipotong-potong
  • egg - telur
  • cabbage, carrots, broccoli, potatoes, slice all - kubis, wortel, brokoli, kentang, potong-potong semuanya
  • Tomatoes, slice - tomat diiris-iris
  • celery, leeks, slice all - daun bawang, daun seledri, diiris
  • corn starch/maizena - tepung jagung atau tepung tapioka
  • Oil - minyak
  • 3 cloves of garlic - 3 siung bawang putih
  • 1 onion - 1 bawang bombay
  • 1 red onion - 3 siung bawang merah atau 1 bawang bombay merah
  • paprika - paprika
  • pepper - merica
  • salt - garam
  • lemon - jeruk lemon

Directions - Cara Membuat:

For Pasta/noodle - Untuk Mie:
  1. Cook noodle until ready. Let it getting not hot - Masak mie hingga matang kemudian dinginkan.
  2. Fried noodle until crispy with oil - Goreng mie hingga ksripi

Vegetable Sauce - Saus Sayur:
  1. Boiled chicken fillet until the chicken ready. Save the broth, take out chicken and slice the chicken with square shape - Rebus ayam filet hingga matang. Simpan kaldunya, keluarkan ayamnya dan potong-potong dadu.
  2. Blender garlic, onion and red onion. Add pepper and salt. Stir-fry - Haluskan bawang putih, bombay dan bawang merah. Tambahkan merica dan garam.
  3. Put chicken fillet, shrimp that already slice - Masukkan ayam filet yang sudah dipotong-potong dan udang yang telah dipotong-potong ke dalam tumisan bumbu.
  4. Put the broth until boiled - Masukkan kaldu hingga mendidih ke tumisan.
  5. Put pepper and salt as you want - Tambahkan merica dan garam secukupnya.
  6. After boiled put all vegetable and let until the vegetable ready - Setelah mendidih masukkan semua sayuran yang telah dipotong dan tunggu hingga sayuran matang.
  7. Mix maizena flavor with water in the other place after mix, put it into the pan that have all vegetables. Wait until thick - Campurkan maizena dengan air di mangkuk, lalu masukkan dalam panci yang berisi sayuran. Tunggu hingga kental.
  8. Open the egg and put into the pan and stir to make it look nice - Buka telur lalu masukkan ke dalam panci dan aduk sehingga terlihat seperti serabut di masakan.
  9. Stir until the dough boiled - aduk hingga mendidih
  10. Put the slice of celery, leeks - Masukkan daun bawang dan daun seledri

Presenting - Penyajian:
  1. Put the fried noodle to the plate as you want - Masukkan mie goreng kering ke piring secukupnya
  2. Flush the sauce on the noodle - Siram dengan saus sayuran secukupnya.
  3. Give a lemon as you want - Tambahkan jeruk nipis atau lemon secukupnya.
  4. Remember put love as much as you can into your plate :p Jangan lupa tambahkan bumbu cinta supaya rasanya sempurna ;)

SHRIMP SOURCE AND SWEET SAUCE - UDANG ASAM MANIS

I invite you to join my kitchen with shrimp food. Today we will cook shrimp source and sweet sauce. This is also my favorite food. Nyam..nyam... shrimp always good in the tongue. Have a nice day with shrimp today ;)

Ingredients - Bahan:
  • 250 gram shrimps - 250 gr udang
  • 1 spoon water of citrun - 1 sdm air jeruk nipis
  • 3 spoon tomato sauce - 3 sdm saos tomat
  • 2 cloves garlic, mince - 2 siung bawang putih, geprek
  • ½ Bombay onion, slice - 1/2 butir bawang bombay, iris melintang (bawang merah juga bisa)
  • 1 leeks, slice - 1 batang daun bawang, potong kasar
  • 1 tea spoon sugar - 1 sdt gula pasir
  • ¼ tea spoon pepper - 1/4 sdt lada bubuk
  • salt - garam secukupnya
  • water - air secukupnya
  • butter - mentega untuk menumis

Directions - Cara membuat :
  1. Put citrun into shrimp and wait until 5 minutes - baluri udang dengan air jeruk nipis dan garam. diamkan 5 menit.
  2. Stir fry garlic and onion with butter until you can feel the smell - panaskan mentega, tumis bawang putih dan bawang bombay/bawang merah hingga wangi.
  3. Put shrimp until the shrimp change the color - masukkan udang, aduk cepat hingga udang berubah warna (kalo ada air jeruk nipisnya masukkan juga).
  4. put tomato sauce, salt, sugar, and pepper - masukkan saus tomat, garam, gula pasir, lada bubuk, dan kecap. aduk rata.
  5. put water - tambahkan air secukupnya
  6. And the last put the leeks into it and now after well done, put everything into the plate and enjoy it with pleasure :) - setelah matang, masukkan daun bawang, aduk rata.
